Spicy Potato Chips

200g sweet potatoes
1 tsp chilli powder
1 tsp salt
1 tsp finely grated lime rind

Peel and cut sweet potatoes into thin slices or thin strips.

Combine the chilli powder, salt and lime rind together.

Heat oil in a wok.  Add sweet potato slices in batches and deep-fry for 1 to 2 minutes or until crisp.

Remove onto a plate lined with several pieces of paper towels.  Sprinkle sweet potatoes with combined salt mixture.  Toss to combine.
